MatPat did a Game Theory about the "barrel roll" from Star Fox that one of the characters tell you to do. In the video he reveals its actually an aileron roll. This is because a barrel roll spins but also moves the placement of the plane in a barrel shape, while an aileron roll spins but stays relatively in place.

This is a barrel roll. ELI'mOlder: An aileron roll is simply the plane spinning on its center axis. The axis the propeller is on. A barrel roll is the plane making maneuvers that would look like it's winding its way up the outside of a barrel (all while the "top" of the plane faces the middle of the barrel).
Here's a quick suggestion I would recommend that you, instead of dropping off the main bridge, go to the bridge over by the danger sign. It doesn't have slanted walls, and it is a lot easier for your car to roll in the air off of it. It's also easy to go off the corner of the Desert Dunes danger sign.
Since it's a brand-new element to you, I perfectly understand your frustration. Sounds like you are repeating one roll twice on your non throw hand (left side), which resulted in the mach 5. You need to alternate the rolls on each hand to undo each roll (while the wraps on your throwhand index are normal.)
To do a barrel roll you have to do a front/back flip while your character is sideways. I found the only way to do this consistently on skis or snowboard is to switch stances (L1) right before going off a jump and then do a flip. You'll turn sideways right as you launch and barrel roll.
