Because the most recent version of optifine available is for 47.1.43 and that's a review version, so no you cannot use optifine and forge for any version of forge after 47.1.43 and even if you do downgrade your forge to accommodate, some 1.20.1 mods are incompatible with it, i found that out trying forge 47.0.35 most good 1.20.1 mods like aether and twilight forest need 47.1 or higher to work ...

Don’t add optifine directly to the modpack, when you go into the launcher go to installations and open the folder for the installation and click on mods and put optifine in their and voila it works! This does, thank you. Is there anyway of knowing what mods would be interfering? Or resource packs, maybe? I'm using the better minecraft mod and I've seen people using shaders with it, so I'm wondering if being unable to use optifine is a me thing or a widespread thing. Edit: I have launched the modpack before adding optifine.

Reload the game. The shader pack button should be under video settings once Optifine is installed. Last time I checked, the Optifine release for 1.17 has not implemented shaders yet, so it is grayed out. Edit: and to be clear, the Minecraft running on Curseforge is a different instance than the original game.
