Kaneki's optimism now is a result of dealing with his depressing past and flaws, and dealing with it in a healthier, more productive way. I honestly hope Kaneki makes a pun, though.

In Tokyo Ghoul:RE they're already able to make the human body support kagunes, and a major breakthrough is needed in terms of both technologies and ghoul knowledge when it comes to this type of operation. I think they already can change the people's palate. Kaneki can eat normal human food while he's on RC suppressants.
