Sentinel Hub is a (payable, free trial available) API providing harmonized access to the Sentinel (and other) data, supporting sub-setting (e.g. choose only the small field), stiching (so that you do not have to bother with two sets of data on the border of scenes), composites (e.g. if you want leaf area index rather than original reflectance values), reprojection, up- and down-scaling, etc.

Regarding the differences in values: JP2 files (the files on Sentinel-Hub S3 bucket are the same as provided by ESA, just renamed) have so called digital number values, stored as 15bit integers. When you do a request to SentinelHub services, you can specify if you'd like to get digital numbers or (top-of-the-atmosphere) reflectance values.
